EIGHT

Day eight is coming to a close.  We’ve been busy, working in the cafe (made a brown sauce today, from the brown stock of yesterday, to become the demi glace tomorrow) we’ve had 4-h meetings and rides and I just agreed to coach my older kids soccer team. I don’t know what I was thinking.

Day eight. What did I do today to build my wall? I wore a shirt and jeans that kind of showed my “poochy” belly, and I just accepted it. I didn’t look down at it and I didn’t talk badly about myself. I am putting post it notes in my purse with a marker, so I can leave some encouragement in the public bathrooms tomorrow, as per operationbeautiful.org

 

Today was also “Test Kitchen Tuesday.” We had: grilled tillapia with a cranberry chipotle glaze and some smoked salt, we also had roasted parsnips, broccoli, carrots and garlic, along with a long grain brown rice. What did I learn in my test kitchen? That I cannot grill fish and research allergies. The fish got a bit over done. I did like the flavor combo though. Also, I roasted the veggies in the oven, along side a bulb of garlic in foil, which I squeezed out over the veggies when they were done. To roast the veggies, I chopped everything into a medium dice, sprinkled some olive oil over and a bit of salt and popped in the oven. Even the kiddos liked it.

Here are pictures of my bread baking, Sunday. I took the starter out of the fridge the night before. The morning of, I added some water and flour to the starter to reactivate it. After church, i made the bread dough with it. I then went on my 6 mile run while it rose. Came home, punched it down, took a shower, and punched it down again, then let it rise for the third and final time in the pans….

Tomorrow promises to be busy. I plan on getting up, doing my bible study, going for a 30 min. run, working from 9-12 in the cafe, heading to piano lessons, then to 4-h office for horse camp registration, then wait until 7pm for the coaches meeting. ugh. I see a restaurant dinner in town tomorrow.
